Shrimp Spring Rolls are delightful, especially if you love shrimp and super fresh taste.
If you are looking for a light appetizer to wow your friends, family or yourself this recipe is for you.
Shrimp Spring Rolls is one of my go to recipes I’ll make to share at a ladies pot luck or brunch. Every time I bring it these two things usually happen. There’s are a few people congregating by the plate enjoying until it’s gone, and there’s always a request for me to bring them next time. So I’d say making this recipe is a winner!
I’ve adapted the recipe from a cooking class I took at The Culinary Institute. I simplified and shrimpified it (if that a word). The original recipe used pork tenderloin and had many ingredients that required a trip to an asian grocery market. You could still substitute pork but I prefer shrimp.
Are you ready to get your shrimp rolls on?
Here’s what you’ll need to make:
Elle’s Super Fresh Shrimp Rolls
Ingredients:
- 1/4 pound large shrimp
- 1 Carrot
- Fresh Cilantro
- Fresh Mint
- Bibb Lettuce – green or red
- Rice Noodles
- Rice Paper (round)
- Peanuts chopped
Dipping sauce:
- Hoisin Sauce and/or Sweet Chili Sauce
Directions:
Step 1 – Prepare your ingredients.
Shred carrot and and 1 tsp sugar. Set aside.
Chop cilantro leaves and mint leaves. Set aside.
Clean and dry your lettuce leaves on paper towels.
Chop peanuts. Set aside.
Cook rice noodle and drain. Set aside.
Peel and devein shrimp. Rinse and dry on paper towel.
Step 2 – Cook your Shrimp.
Saute your shrimp with olive oil adding salt and minced garlic if you choose. Drain shrimp and cool. Cut shrimp in half lengthwise.
Now, you are ready to make your shrimp rolls. You will need a clean space to assemble your spring rolls. I use my cutting board.
Step 3 – Assemble your Spring Rolls.
Take 1 rice paper and lay flat in container of water. Rice paper will soften immediately. Gently lift from water and place on your prep area. Handling the rice paper is the most challenging part of making spring rolls.
Lay piece of lettuce on rice paper. Layer carrots, rice noodles and cilantro on lettuce. Begin to roll the rice paper up to cover up food. Tuck in sides.
Add 4 half shrimp across roll. Sprinkle with cut mint leaves. You could add chopped peanuts if you choose. Continue to roll and tuck in sides until done.
Place completed spring roll on serving plate. Repeat until done.
Step 5 – Dipping Sauce & Eat!
Pour hoisin sauce, sweet chili sauce and chopped peanuts in ramekins to accompany Elle’s Shrimp Spring Rolls.
